Abstract

Cakalang fufu, a traditional smoked skipjack tuna product from North Sulawesi, requires a reliable sterilization process to ensure product safety, extend shelf life, and maintain quality. This study presents the design and implementation of a solar-powered retort machine integrated with an Internet of Things (IoT) monitoring system for cakalang fufu sterilization. The system utilizes a 750 Wp photovoltaic panel as the primary energy source, supported by a dual control configuration consisting of a manual panel and an IoT-based panel. The IoT interface enables real-time monitoring and control of critical process parameters such as temperature, pressure, and processing time via a web-based dashboard, allowing for remote supervision and data logging. The retort machine was designed to achieve uniform heat distribution, reduce energy consumption, and comply with food safety standards. Experimental results demonstrate that the system successfully maintains the required sterilization temperature of 121 ℃ at 1.2 bar for the recommended holding time, while operating efficiently under varying solar conditions. This innovation offers a sustainable and energy-efficient solution for small- to medium-scale fish processing industries, contributing to renewable energy utilization and the digital transformation of traditional food processing.
