Abstract

Antiga Village, located in Karangasem Regency, has abundant potential in sapodilla (Manilkara zapota) fruit farming. However, the majority of its harvest is consumed fresh without further processing. This study aims to enhance the technical knowledge and skills of the local community in processing sapodilla into value-added products, such as chips and jam, while also developing their packaging and marketing capacities to sustainably improve economic welfare. The approach used was Asset-Based Community Development (ABCD), involving 15 participants from the local farmer group. The training included participatory and hands-on sessions on processing techniques, packaging, and product marketing. Results showed that 88% of participants understood the training materials, and 72% felt ready to begin independent production. The sapodilla jam was found to have good taste and texture quality, while the sapodilla chips still faced challenges related to astringency. Continued mentoring and access to production tools are necessary to ensure the sustainability of these efforts. This training successfully empowered the community by utilizing local assets, fostering self-reliance, and opening up opportunities for the development of sapodilla-based processed products as a new source of income in Antiga Village.
