Optimization of Moringa (Moringa Oleifera) Leaf Extract and Rice (Oryza Sativa L.) in Instant Rowe Luwa Porridge

Abstract

Southwest Sumba is one of the areas with a high prevalence of stunting. Southwest Sumba has the potential for Moringa plants, where Moringa leaves can be used to increase nutritional value. One type of popular local food is rowe luwa, which is research conducted to develop local food based on local resources to support stunting management. The research aimed to obtain the optimal formula for Moringa leaf extract and white rice and the characteristics of instant Rowe Luwa porridge. Optimize the product formula using the Design Expert Mixture D-Optimal method. Based on the study results, it can be concluded that from the ten formulations tested, one optimal formulation based on the value is desira ability obtained, namely Moringa leaf extract by 4.28% and white rice by 2.34%. The results based on the predictions of the program Design Expert showed that the water content was 4.41%, the ash content was 10.13%, the fat content was 7.69%, and the protein content was 17.38%. The carbohydrate content was 60.39%—organoleptic value with colour attribute 4.13, aroma 3.83, texture 3.63, and taste 3.43.
