- Abstract
This study examines the influence of innovation on culinary SME performance in Makassar City, with competitive advantage as a mediating variable. The research addresses the rapid growth of culinary SMEs in Makassar, which represent nearly one-third of total SMEs in the region. Using a quantitative approach, data was collected through structured questionnaires from culinary SME owners in Makassar, selected through stratified random sampling. Data analysis was performed using Partial Least Squares Structural Equation Modeling (PLS-SEM). The findings reveal that innovation has a positive and significant effect on both competitive advantage and SME performance. Additionally, competitive advantage is proven to partially mediate the relationship between innovation and SME performance. The results contribute to the theoretical understanding of innovation’s role in SME development and provide practical implications for business owners and policymakers. The study suggests that culinary SMEs should focus on continuous innovation in products, processes, and marketing strategies while developing sustainable competitive advantages through differentiation and enhanced customer experiences to improve their performance in an increasingly competitive market.
