Abstract

The frozen fish processing unit plays a crucial role in preserving the quality and extending the shelf life of the catch before distribution to local and international markets. PT. ABCD is based in Jakarta and produces a range of fresh fish products, with frozen tuna loin among its key offerings. The target markets for these products include China, Canada, Korea, Vietnam, the USA, and Australia. PT. ABCD is committed to implementing comprehensive strategies to enhance the productivity of its operations. The study aimed to identify production problems and develop strategies for increasing frozen tuna loin production. The research method utilizes descriptive qualitative analysis, with data collected through observations and interviews from both workers and managers. Key performance indicators (KPIs) for frozen tuna loin processing included: product quality; food safety; production yield; production efficiency; waste management; and delivery timeliness. The analysis of production issues has identified four main problems that require immediate attention. One of the primary concerns is the short service life of the cutting saw tool, which typically lasts only two weeks before becoming damaged or broken. To improve productivity, four strategies have been proposed. The first step is to conduct an inventory and assess the effectiveness of production tools, particularly the cutting saws. This study concludes that enhancing the ability to identify the root causes of these problems is expected to increase productivity and, in turn, boost the income of PT. ABCD.
