Abstract

The research aims to explore the background and development of the traditional Simalungun dish, Dayok niura (chicken cooked with spices), as well as the symbolic meaning it holds for the Simalungun ethnic group in Pamatang Bandar Village, Pamatang Bandar Subdistrict, Simalungun District. The research type is qualitative with an ethnographic approach to uncover symbolic meanings through participant observation, in-depth interviews, and documentation. The study involves community leaders and the general public. The research findings indicate that Dayok niura is one of the traditional dishes that is grilled and mixed with sour spices and unique herbs to create a distinctive flavor. The choice of chicken is the easiest domesticated animal to raise, as it has been passed down from ancestors and continues to be raised to this day. This snack is typically served during rituals or specific ceremonies to convey intentions and prayers to the Almighty God for the success of life. The ingredients used are sourced from the local environment to create a distinctive flavor and are processed manually in a hygienic manner. Dayok Niura is not a filling dish but rather focuses on religious values, with prayers and hopes for blessings in life embedded within it. This dish is not served daily but only on specific occasions that signify its uniqueness, reflecting the purpose and meaning of life.
